Those who knew Mauricio described him as the life of the party, someone who always put other people’s feelings before his own. This empathy was further demonstrated by his strong commitment to family: he was married to Jennie Rincón, and together they raised two children, Christian and Caylin. He maintained a close relationship with his mother, Betty, and his brother, Phillip, sharing core values of devotion, solidarity, and zest for life. Among his favorite pastimes were exercising, occasionally smoking cigars, playing poker and dominoes, enjoying the beach, and spending time with friends. He was well-known for his trademark phrase, “Let’s goooo!”—a rallying cry of enthusiasm and camaraderie.

Business Career and Contributions

During his tenure, the family operation grew from 8 to 13 restaurants, an achievement that positioned him as a highly recognized member within the corporation for his entrepreneurial approach and leadership ability. Along with his business responsibilities, he also served on the board of directors of Ronald McDonald House Charities, contributing to social and philanthropic causes. ALS Diagnosis and Adjustment

Mauricio’s life took an unexpected turn in November 2023, when he was diagnosed with amyotrophic lateral sclerosis (ALS). This challenge tested him both personally and professionally, as the disease progressed swiftly, causing him to lose around 30 pounds of muscle mass and affecting his arms and hands. Despite this, his faith in God grew stronger, and though he experienced anxiety and stress amid the uncertainties of his condition, he found solace in his family’s unwavering support. He had to step back from his work, entrusting day-to-day operations to a trusted director, and spent the last year of his life more privately. Nevertheless, in his final months, he managed to resume a portion of his exercise routine, reflecting the resilient spirit that never truly left him.

Therapeutic Approach and Emotional Resilience

To cope with ALS, Mauricio and his family turned to functional medicine, adopting an organic diet and creating a toxin-free environment. At times, he was highly optimistic, believing they might halt the disease’s progression, but he also faced moments of deep frustration over his physical limitations, which led him to keep his diagnosis hidden from many, out of embarrassment. Even so, his wife Jennie, his children, and a tight-knit group of friends provided unyielding support, encouraging him to cherish every moment and reminding him of the importance of hope and resilience in the face of adversity.
